The region of Wensleydale has been making its eponymous cheese since 1150, but when the last Wensleydale creamery closed its doors in 1992, this classic English cheese faced extinction until four ex-managers of the plant, along with a group of local businessmen, bought the creamery and once again began to hand make the cheese from the traditional recipe using milk from local farms. Today, The Wensleydale Creamery employs over 200 people, has obtained another creamery, and is busy making award-winning cheeses. We met with managing director David Hartley who is working with Anco Fine Cheese to distribute their delicious cheeses in the U.S. In addition to their classic handcrafted Real Yorkshire Wensleydale, they produce several other specialty and flavored cheeses, including their newest, Real Yorkshire Wensleydale & Cranberries.
